She Made Blueberry Muffins
Today the kids had a blast even though it was hot they had fun. We were so exited to be out in the city. We packed lunch went to Harlem to see visit a new playground and had a blast. On our way home they were so sleepy, once we got home they all rested and I read a littlw before getting dinner ready. After dinner was done B said she wanted to make some muffins so we checked our pantry for the ingredients. She had pulled the blueberries out the fridge, looked at me and said “I will do them myself!”
We, well she made eggless blueberry muffins. I must admit I had a nibble to try them out and they were yummy. It was a proud mommy moment for me, I’m usually the baker and they help but B insisted I was the helper. Having children help you in the kitchen gives them a self of independence, it is a fun way to incorporate math. Also gives them great memories, we had fun and she was so proud at how they turned out. Give them a try.
Instructions:
Pre heat your oven at 375 and spray your muffin pan with non stick spray or place muffin cups
In a medium bowl mix all your dry ingredients together
In a small bowl mix all wet ingredients together except blueberries together well.
Add wet and dry ingredients together be careful not to over mix, stir the mixture, it should be lumpy not smooth
Stir in blueberries, Pour mixture into the muffin pan filling a little more than 3/4 full. Top with sugar
Place in oven and bake for 23 minutes
Let cool for 15 minutes before eating

Eggless Blueberry Muffins:
Dry Ingredients
1 1/2 cup All purpose unbleached flour
2 tsp Baking powder
1/2 cup Cane sugar + more
1/2 tsp Sea salt
Wet Ingredients
1 tsp Vanilla
1/2 tsp Apple cider vinegar
3/4 cup Blueberries
1/2 cup Vanilla almond milk, unsweetened (or Milk of Choice)
1/3 cup Applesauce, unsweetened natural
1/4 cup Vegetable Oil
