Meal Prepping when your schedule is nuts.
The idea of living a healthier life with kids can be the ultimate goal. But it can be quite a mission when you have a full time job and get home. For a while, we were seasoning and prepping after we got home and noticed that the exhaustion of the day would catch up to us. Dinner would end up half-assed and not that good. We had to do better.
We decided that meal prepping for the week is best for our crazy schedule. Sunday is our prep day. We get up early, get the kids fed, and head to the market to pick up our veggies, fruits, nuts, and meat for the week. When we get home we feed the kids lunch and while they're playing we're in the kitchen prepping.
We cut our veggies for the week, separate them in freezer bags, label them and place them in the freezer. We do the same for meat; cut, clean, season, label, and pack away. We also pack snacks in snack bags for us to take to work during the week. The next day all that needs to be done is take down meat and veggies and place in the fridge to thaw. By the time we get home, all we have to do is cook. I let the kids choose what side they want with their veggies on the way home from camp and daycare.
