Instagram's Tomato Soup

While aimlessly scrolling through Instagram reels, my oldest and I spotted an easy tomato soup recipe. After seeing it several times, we decided to give it a try. How bad could it be? It had to be better than the traditional can of tomato soup.

Ingredients: 
Serves 4

2 pints of cherry tomatoes 
1 medium onion 
2 tsp kosher salt 
1 tsp crushed pepper 
2 heads of garlic 
3-4 tbsp Olive Oil
Two Sprigs of Rosemary

1 cup of coconut milk (milk of choice)

Making this was super simple, place in a baking dish a preheated oven at 425° degree for 30-40 minutes. Once you remove them from the oven, the tomatoes will blister open and the garlic soft. Remove the leaves from the sprig of rosemary, pop the garlic from its skin. After place rosemary leaves, garlic, tomato, onion into a blender with milk of choice. Blend until smooth or the consistency you like.

We made a grilled cheese on sourdough bread, but it’s so good you can eat it independently. We also top with olive oil, then added olive oil gives it such an excellent finish. Since we started making this, it's been a family favorite. If you want to make more, you can always double the ingredients, which we usually do. Hopefully, you can enjoy this on a rainy, chilly day.
