Buffalo Chicken-Balls (Slow-Cooker)

On occasion I get the urge to have some buffalo wings with blue cheese, but not everyone at home likes wings. As a replacement I like making a not so classic type of meatball and I actually like doing them in our slow cooker because the buffalo sauce soaks into the chicken better. Leaving the chicken tender and oh so yummy.

The ingredients that you need are:
◦  3/4 cup pork rinds
◦  1/2 tsp garlic powder
◦  1/2 tsp oregano
◦  1/2 onion powder
◦  1 pinch salt and pepper
◦  3/4 cup buffalo sauce
◦  1 lbs of ground chicken
◦  a slow cooker
◦  a processor
◦  Blue Cheese for Dip

Because the meatballs need a binding agent, we use the pork rinds, to keep it keto. If you are not eating keto you can use bread crumbs or panko. I crumble them up into a breadcrumb consistency, we use the small KitchenAid processor. It’s really small it’s not gigantic and doesn’t take a lot of space in our home.

I like to combine the ground chicken with garlic powder, oregano, onion powder, salt and pepper together. Once all well combined I mix in the eggs and the crumbs together, I prefer using my my hands to bind the egg and crumbs.

Mold the ground chicken mixture into the shape of a meatball. I make a total of 25 chicken balls once they are rolled up together, browned them in a pan about 5 to 10 minutes. You want to brown them up a bit because they will cook completely in the slow cooker.

Once the chicken is browned you place them into your crockpot with 3/4 cup of buffalo sauce. Cook on low heat cook that for about two hours if you want a little bit more sauce you can add more.

Once they done you can serve them with blue cheese dressing. I love creating these for the family, you can create these for game night and make the balls smaller or double the batch for more. Your friends would love these, especially if they don’t like bones.
